LUCY'S POTATO SALAD 
5 lbs. red Irish potatoes
6 hard-boiled eggs
3 c. celery, diced
Parsley as desired
Olive oil as desired
Mayonnaise as desired
Salt to taste

Boil eggs before getting potatoes and other ingredients ready. While potatoes are boiling, dice celery, snip parsley and cut eggs in small cubes. Blend with olive oil and mayonnaise. Salt to taste. When potatoes are ready, peel and let cool a little. Layer small slices of potato with the other ingredients alternately.
