MACAROON SUGAR COOKIES 
1 c. sugar
1 c. brown sugar
1/2 c. butter (softened)
1 tsp. vanilla
1 c. shortening
1 egg
2 c. flour
1 c. Hungry Jack mashed potato flakes
1 tsp. baking soda
1 c. flake coconut
1/2 c. chopped nuts

Heat oven to 375 degrees F. In large bowl combine sugar, brown sugar, shortening, butter and vanilla. Blend well. Beat in egg. Add flour and potato flakes, soda and salt. Stir in coconut and nuts.

Shape dough into 1 inch balls. Place 2 inches apart on ungreased cookie sheet. Flatten with bottom of glass that has been dipped in sugar. Bake 6 to 8 minutes. Cool on pan a few minutes before removing. This makes 4 to 5 dozen cookies.
