CHEESY VEGETABLE CASSEROLE | |
2 (10 oz.) pkgs. frozen mixed vegetables 1 c. chopped celery 1/3 c. chopped onion 1 c. mayonnaise 2/3 c. shredded sharp Cheddar cheese 1/4 tsp. salt 1/8 tsp. pepper 2 c. bite-size Cheddar cheese crackers, crushed 1/4 c. butter, melted 1/2 c. sharp Cheddar cheese (optional) Cook frozen mixed vegetables according to package directions; drain well. Combine cooked vegetables, celery, onion, mayonnaise, 1/2 cup shredded cheese, salt and pepper. Spoon into a greased 2 quart casserole dish. Combine remaining ingredients and sprinkle over top. Bake at 300 degrees for 30 to 40 minutes. Yield: 8 servings. |
