STUFFED ZUCCHINI 
4 sm. zucchini
4 tbsp. bread crumbs
1-2 cloves of garlic
Chopped parsley
Salt
Pepper
Olive oil or Wesson oil

Wash and scrub zucchini and don't peel them. Cut in half; scoop some seeds out and make a little groove. Salt and pepper both sides.

FILLING:

Bread crumbs with salt & pepper
Parsley & garlic, chopped together

While mixing the filling and oil to moisten bread crumbs, fill zucchini with stuffing; place zucchini in either Pyrex dish or Corning Ware with oil on bottom. Sprinkle a little oil on top of zucchini and bake for about 1/2 - 3/4 hour in 300 degree oven. If bread crumbs start burning, cover with aluminum foil for awhile.
