CORN FRITTERS 
6 ears of fresh corn, grated or 1 can cream style corn
3 eggs
1 c. flour
1/2 c. chopped onion (optional)
1 tsp. paprika
2 tbsp. sugar
2 tsp. baking powder
1 tsp. salt

Separate eggs. Beat yolks. Beat whites until stiff. Add yolks to corn, flour, onion (optional) and seasonings. Fold in egg whites, then baking powder. Drop in hot grease in a deep pan. Serves 6.
