GOLDEN CORN FRITTERS 
1 c. self-rising flour
1 tsp. sugar
1 tsp. salt
1/2 tsp. pepper
2 eggs, beaten
1 1/2 c. fresh corn, cut from cob (about 3 ears)
1/2 c. milk
2 tsp. vegetable oil, hot

Combine first 4 ingredients in a large mixing bowl; mix well and set aside. Combine eggs, corn, milk, and 2 tablespoons vegetable oil; mix well. Stir corn mixture into dry ingredients. Drop mixture by rounded teaspoonfuls into vegetable oil heated to 375 degrees. Cook fritters until golden, turning once. Yield: About 3 dozen.
