GOLDEN CORN FRITTERS 
1 c. self-rising flour
1 tsp. sugar
1 tsp. salt
2 tsp. hot vegetable oil
1 1/2 c. corn (for a better flavor, fresh corn cut from cob, 3 ears)
2 eggs, beaten
1/2 c. milk
1/2 tsp. pepper

Combine flour, sugar, salt and pepper in a large mixing bowl; mix well and set aside. Combine eggs, corn, milk and 2 teaspoons vegetable oil; mix well. Stir corn mixture into dry ingredients. Drop mixture by round teaspoons into very hot vegetable oil. Cook fritters until golden brown, turning once.
