CORN FRITTERS 
1 (12 or 16 oz.) can whole kernel corn, drained
1 c. flour
1/4 c. milk
2 eggs
1 tsp. baking powder
1/2 tsp. salt
Vegetable oil for frying, plus 1 tbsp. oil
Maple syrup

Pour vegetable oil into electric skillet to 1/2 inch depth. Heat oil to 400 degrees on deep frying thermostat. Using fork, stir together 1 tablespoon oil, corn, flour, milk, eggs, baking powder and salt in medium bowl. Drop batter by large tablespoonfuls into hot oil and fry for 3 - 5 minutes until golden brown. Turn each fritter once. With slotted spoon, remove fritters to paper towels. Serve hot with syrup, or with fried chicken, crisp bacon, or baked ham. Makes 6 fritters.
