MOM'S POTATO WEDGES 
6 med. potatoes
Water
3 tbsp. oil
1/2 tsp. salt
Dash of pepper
1/2 tsp. dried oregano leaves
1/2 tsp. dried thyme leaves
Dash cayenne pepper
1/3 c. grated Parmesan cheese
2 tbsp. grated cheddar cheese

1. Wash unpeeled potatoes. Cut each potato in half lengthwise. Then into even wedges.

2. Boil potatoes in salty water for 5 minutes. Drain and pat dry.

3. Spread wedges in a single layer on a lightly greased baking sheet. Sprinkle with oil, spices and herbs.

4. Bake at 425 degrees for 15 minutes. Sprinkle with cheeses. Bake until wedges are golden brown and cheese is melted. Serve.
