MOM'S POTATO WEDGES 
6 med. potatoes
Water
Dash salt
3 tbsp. oil
1/2 tbsp. salt
Dash black pepper
1/2 tbsp. oregano leaves
1/2 tbsp. thyme leaves
Dash cajun pepper
1/3 c. grated Parmesan cheese

Scrub unpeeled potatoes well cut each potato in half lengthwise. Then cut into even wedges. Boil potato wedges for 5 minutes in salted water. Drain and pat dry. Spread potatoes wedge in a single layer on lightly greased baking sheet. Sprinkle with oil spices and herbs. Bake at 425 degrees for about 15 minutes. Sprinkle with cheese, bake at 425 degrees to 450 degrees for another 10 to 15 minutes.
