POTATO WEDGES 
6 med. potatoes
Water
Dash of salt
3 tbsp. oil
1/2 tsp. salt
Dash of black pepper
1/2 tsp. dried oregano leaves
1/2 tsp. dried thyme leaves
Dash of cayenne pepper
1/3 c. grated Parmesan cheese
2 tbsp. grated Cheddar cheese

Scrub potatoes well. Cut each potato in half lengthwise, then cut into even wedges. Boil potato wedges for 5 minutes in salted water. Drain. Pat dry. Spread potato wedges in a single layer on a lightly greased baking sheet.

Sprinkle with oil, spices and herbs. Bake at 425 degrees for about 15 minutes. Sprinkle with cheese. Bake at 425 to 450 degrees for another 10 to 12 minutes or until potatoes are golden brown and cheese melted.

Serve as snack or with pork chops, chicken, meat loaf or hamburgers.
