MOM'S POTATO WEDGES 
6 med. potatoes
Water
Dash of salt
3 tbsp. oil
1/2 tsp. salt
Dash of pepper
1/2 tsp. oregano
1/2 tsp. thyme
Dash of cayenne pepper
1/3 c. Parmesan cheese
2 tbsp. grated Cheddar cheese

Scrub potatoes. Cut each in half long ways, then cut into even wedges. Boil potatoes 5 minutes in salted water; drain. Pat dry. Put in a single layer on a lightly greased baking sheet. Sprinkle with oil, spices, and herbs. Bake at 425 degrees for 15 minutes. Sprinkle with cheese. Bake at 425 to 450 degrees for 10 to 12 minutes or until golden brown and cheese is melted.
