FRESH STRAWBERRY PIE
1 qt. strawberries
1 c. sugar
1 c. water
3 tbsp. cornstarch
1 egg white
4 tbsp. sugar
6 berries, sliced
1 pie shell, baked

Remove the hulls from berries, reserving about 18 with the hulls for garnishing. Wash the berries thoroughly. Place 1 cup of berries, 1 cup sugar and 3/4 cup water in saucepan, and cook slowly about 15 minutes. Mix together 1/4 cup water and the cornstarch until it is a smooth paste; add slowly to the berry mixture, stirring constantly until thickened. Continue cooking for 5 minutes longer, stirring frequently. Cool slightly. Add hulled and washed berries, and pour into a baked pie shell. Beat the egg whites until it forms soft peaks. Mix together the 4 tablespoons sugar and the 6 sliced berries. Add the berries slowly to the egg whites, beating stiff. Spread lightly over the berry pie. Garnish around the edge with the unhulled berries. Serve at once.
