SPANISH POTATO OMELET 
6 sm. potatoes
3 med. onion
6 to 8 oz. smoked ham
12 eggs
Salt and pepper to taste
Oil

Slice potatoes, onion and ham with thinnest slicing disc of food processor. (If you don't have food processor, slice as thinly as possible by hand.) Saute potatoes and onion in oil until soft, but not brown. Butter in 11 3/4 x 7 1/2 inch glass baking dish. Layer potatoes, onions and ham in dish. Beat eggs and pour over all. Bake at 325 degrees for 20 to 25 minutes, or until eggs are set. Cut into squares. Serves 6.
