SANDE'S SHRIMP AND CLAM SPREAD
2 cans sm. shrimp
1 can minced clams (reserve juice)
4 env. plain gelatin
1 (8 oz.) pkg. cream cheese (room temp.)
1 c. mayonnaise
1/2 c. minced onion
1 c. celery, chopped fine
1 tsp. lemon juice
Tabasco sauce
Salt
White pepper
Red food coloring

Drain and mash shrimp. Drain clams and save juice. With mixer cream the mayonnaise and cream cheese together. Add several drops of red food coloring to make a light pink color. Blend in shrimp, clams, celery, onions, lemon juice, salt, pepper and Tabasco sauce.

Soak gelatin in clam juice until it makes a thick gooey glob. Squeeze the glob with hands to help smooth mixture (some may actually enjoy this method of mixing). Add the gelatin mixture to first mixture and mix well. Pour into a well oiled mold. Cover and refrigerate overnight. Remove as for any gelatin salad. Garnish and serve with crackers. Waverly wafers are super with this spread.
