TURKEY DIVAN 
1/4 c. butter
1/4 c. flour
1 1/2 c. chicken broth
2 tbsp. sherry
1/8 tsp. nutmeg
1/2 c. whipping cream, whipped
1/2 c. grated Parmesan cheese
1 1/2 lbs. fresh broccoli cooked and drained
Large slices cooked turkey (or chicken) breast meat
1/2 c. Parmesan cheese

In saucepan, melt butter over low heat. Blend in flour. Cook over low heat, stirring until smooth and bubbly. Remove from heat. Gradually stir in broth. Heat to boiling, stirring constantly. Boil 1 minute. Remove from heat. Stir in sherry and nutmeg; gently fold in whipped cream and 1/2 cup cheese. Place the hot broccoli in baking dish, 11 1/2 x 7 1/2 x 1 1/2, top with large slices of turkey (or chicken). Pour sauce over meat. Sprinkle with 1/2 cup cheese. Set oven control to broil. Broil 3 to 5 inches from heat until cheese bubbles and lightly browned.
