TURKEY DIVAN 
1/4 c. butter
1/4 c. all purpose flour
1/8 tsp. nutmeg
1 1/2 c. chicken broth
1/2 c. cheddar cheese
2 tbsp. dry white wine (opt.)
1/2 c. whipping (heavy) cream
1 1/2 lbs. fresh broccoli or 2 (10 oz.) pkgs. frozen broccoli spears, cooked & drained
5 lg. slices cooked turkey breast
1/2 c. cheddar cheese

Heat butter in 1 quart saucepan over low heat until melted. Stir in flour and nutmeg. Cook, stirring constantly, until smooth and bubbly; remove from heat. Stir in broth. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Beat whipping cream in chilled bowl until stiff. Fold cheese sauce into whipped cream.

Arrange hot broccoli in an ungreased rectangular baking dish, 12"x7"x2". Top with turkey. Pour cheese sauce over turkey. Sprinkle with 1/2 cup cheese. Set oven to 350 degrees. Heat until bubbly, approximately 15 minutes. 5 to 6 servings.

Chicken can be substituted for the turkey and Swiss cheese can be used in place of the cheddar cheese.
