ELEGANT CHEESECAKE 
1 1/2 c. crushed graham crackers
1/4 c. confectioners' sugar
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice
1/3 c. melted butter
2 (8 oz.) cream cheese, room temperature
3 eggs
2 tsp. vanilla
2/3 c. sugar
1/4 tsp. slat
1 c. sour cream
1/3 c. sugar
1 tsp. vanilla
1/8 tsp. salt

Combine graham crackers, confectioners' sugar, cinnamon, nutmeg and allspice with melted butter. Press in the bottom and 1 1/2 inches up sides of a 9 inch spring form pan. Bake at 350 degrees for 5 minutes.

Beat cream cheese until smooth. Add eggs one at a time, beat well after each addition. Stir in sugar, vanilla and salt. Pour into crust and bake at 350 degrees for 30 minutes or until filling is set. Remove from oven. Increase oven temperature to 450 degrees.

Mix together sour cream, sugar, vanilla and salt. Pour over hot cheesecake. Bake 5-7 minutes or until set. Cool on rack, then chill until firm. Serve plain or with fruit.
