BACON BAKED POTATOES 
8 cooked, peeled, diced potatoes
1 lb. American cheese, cut in pieces (I use less)
1 c. mayonnaise
1/2 c. chopped onion
Salt and pepper to taste
1/2 lb. partially fried bacon, chopped first

Combine first 4 ingredients. Place in 9 x 13 inch pan. Top with bacon. Cook 1 hour at 325 degrees.
