PUMPKIN BREAD | |
2 c. sifted flour 2 tsp. baking powder 1 c. sugar 1 tsp. baking soda 1 tsp. ground cinnamon 1/2 tsp. ground nutmeg 2 c. pumpkin 1/2 c. milk 2 eggs 1/4 c. butter 1 c. chopped nuts Preheat oven to 350 degrees. Sift together first 6 ingredients. Combine pumpkin, sugar, milk, and eggs in mixing bowl. Add dry ingredients and butter, mixing only until flour is moistened. Stir in nuts. Spread in well greased 9 x 5 x 3 inch loaf pan. Bake 1 hour or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan. Yield one loaf. Pumpkin bread may be frozen after baking and cooling. |
