RHUBARB DELIGHT 
3 c. sliced rhubarb
2 c. sugar
1/3 c. quick cooking tapioca
Pinch salt
1 c. sugar
1 orange, juice and rind
Whipped cream or vanilla ice cream

Bring rhubarb to boil in water. Reduce heat, add tapioca, salt, sugar, orange juice and rind. Stir until sugar dissolves. Cook over low heat until rhubarb is soft and tapioca cooked. Chill. Top with whipped cream or serve over vanilla ice cream. Serves 8 to 10.
