EASY COFFEE CAKE 
1 c. shortening
1 1/2 c. sugar
4 eggs
1 tsp. vanilla
3 scant c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 can cherry or blueberry pie filling

Beat shortening and sugar until creamy. Add eggs and vanilla. Continue beating until well blended.

Combine flour, baking powder and salt. Stir into batter. Beat well. Reserve 1 cup of batter and place remainder in 12 x 15 inch greased cake sheet. Spread with pie filling and place dollops of remaining batter on top. Bake at 350 degrees for 45 minutes. Sprinkle with confectioners' sugar or frost lightly.
