SOUR CREAM POTATO SALAD 
4 c. sliced chilled cooked potatoes
1 c. sliced celery
1/2 c. chopped onion
3 hard-cooked eggs, coarsely chopped
1 c. salad dressing or mayonnaise
1/2 c. dairy sour cream
2 tbsp. lemon juice or vinegar
1 tsp. prepared mustard
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. dill weed

Combine potatoes, celery, onion and eggs in a bowl. Combine and mix remaining ingredients. Add dressing to potato mixture. Mix carefully. Cover; chill several hours before serving. Makes 6-8 servings.

This is a terrific recipe! I usually get something in mind, look for a few similar recipes, and tweak things. This one looked like just what I had in mind so I didn't change a thing... OK, to be fair, I doubled everything except the celery, used light sour cream, and added a few parsley flakes. I used vinegar and dijon mustard... and it's perfect! This one's a keeper!
