HERBED TOMATO-ORANGE SAUCE 
2 tsp. olive oil
4 garlic cloves, minced
2 tbsp. chopped fresh oregano
1 tbsp. chopped fresh basil
1/4 tsp. salt
2 c. plum tomatoes with juice
1/2 c. orange juice
3 oz. part skim Mozzarella cheese, cut into 1/2 inch cubes

In large non-stick skillet, heat oil, add garlic, stirring constantly 2 minutes. Stir in oregano, basil and salt. Add tomatoes, bring to a boil, cook 10 minutes, crushing tomatoes with the back of a spoon. Stir in orange juice, simmer 3 minutes. Remove from heat, stir in Mozzarella. Serve with hot cooked pasta. Makes 4 servings.
