HEALTHY, HEARTY PANCAKES OR HOT
CAKES
 
1/3 c. each rolled oats, cornmeal & all purpose flour
1 tsp. baking powder
2 lg. separated eggs
1/2 tsp. baking soda
1 c. buttermilk
2 tbsp. sugar
1/4 tsp. salt to taste
Salad oil
Whipped eggs

In a bowl combine oats, cornmeal, flour, sugar, baking powder, baking soda and salt. In another bowl whisk egg yolks and buttermilk to blend. Pour liquid into dry ingredients, stir just to moisten evenly. With electric mixer, beat egg whites on high speed until soft peaks form. Gently fold in batter. Heat on electric griddle, 375 degrees. Brush griddle lightly with oil, spoon about 1/3 cup of batter per pancake onto griddle until pancake is set and bottom is medium brown, about 1 minute. Makes about 8 pancakes.
