Serves 8 to 10. 48 Sunshine vanilla wafers 2 pkg. (3 1/4 oz. each) vanilla pudding and pie filling 5 c. milk 2 tsp. rum, brandy or sherry flavoring 1 jar (12 oz.) raspberry jam 1 can (17 oz.) apricot halves well drained 1 c. (1/2 pint) heavy cream, whipped 1/4 c. confectioners' sugar 1/4 c. sliced almonds Red candied cherries Place a layer of wafers on the bottom of a 2 quart straight sided glass bowl. Cook pudding with milk until it bubbles and thickens. Cool and then chill. Stir in flavoring. Make a thin layer of jam over wafers. Top with a layer of pudding. Continue layering ending with pudding. Top with apricot halves. Whip cream with sugar until thick. Spoon cream around outer edge of bowl. Sprinkle cream with almonds. Garnish with cherries. Chill until ready to serve. Serve in small bowls. |
