LEMON PUDDING CAKE 
1 c. sugar
5 tbsp. flour
3 tbsp. butter
1 c. milk
3 eggs, separated
1/4 c. lemon juice
1/2 tsp. lemon rind

Mix sugar and flour thoroughly and cream with the butter. To this add milk, beaten egg yolks, lemon juice and rind. Fold in beaten egg whites. Pour into greased casserole dish and bake at 350 degrees for 35 minutes.
