LEMON PUDDING CAKE 
2 eggs, separated
1/4 c. lemon juice
2/3 c. milk
1 c. sugar
1/4 c. flour
1/4 tsp. salt

Beat egg whites until stiff peaks form. In another bowl, beat egg yolks slightly. Beat in lemon juice and milk. Beat in remaining ingredients until smooth. Fold into beaten egg whites. Pour into greased casserole dish. Place casserole dish inside a pan of hot water.

Bake at 350 degrees for 45-50 minutes.
