"SLIMMED-DOWN" APPLE CAKE 
1 1/4 c. sugar
1/2 c. vegetable oil
2 egg whites
1 egg
2 tsp. vanilla
1 c. apple juice
2 c. all purpose flour
3/4 c. whole wheat flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. baking soda
3 c. peeled, cored and sliced cooking apples (such as Golden Delicious or McIntosh)
1/2 c. finely chopped walnuts
Powdered sugar

In large mixer bowl beat sugar and oil until combined; add eggs and vanilla. Beat on medium speed for 1 minute or until creamy. Stir in juice.

In medium mixing bowl stir together the flours, baking powder, cinnamon, nutmeg, and baking soda. Stir flour mixture into egg mixture. Gently stir in the apples and walnuts. Pour batter into a greased and floured 10-inch tube pan. Bake in a 350 degree oven for 60-65 minutes or until toothpick comes out clean. Cool in pan for 10 minutes. Remove from pan; cool on a wire rack for 30 minutes. Serve warm. If desired, sprinkle the cake with powdered sugar.
