FRESH APPLE CAKE 
1 1/8 c. vegetable oil
2 c. sugar
2 well-beaten eggs
1/2 tsp. salt
1/2 tsp. baking soda
2 c. flour
2 tsp. vanilla
2 c. Delicious apples, chopped (fresh and peeled or unpeeled)
1 c. chopped pecans

Pour in greased 9 x 13 pan.

Bake at 350°F for 40 to 60 minutes. DO NOT open oven door until cake has been baking at least 30 minutes. Can be served with whipped cream.
