UPSIDE DOWN CAKE | |
1/3 c. butter 3/4 c. firmly packed light brown sugar 6 slices of canned pineapple 1 pkg. cake mix (yellow, orange, orange-coconut) 1 (11 oz.) can mandarin oranges Coconut (optional) 6 maraschino cherries Melt the butter in a 13 x 9 x 2 inch pan. Sprinkle with brown sugar. Arrange the slices of pineapple on sugar. Prepare the cake mix as directed on the label. Pour batter over the pineapple slices and bake as directed for pan size. Turn out on rack and cut into 6 serving pieces. Drain the mandarin oranges. Arrange sections around each cake serving and sprinkle with coconut. Put a maraschino cherry in each pineapple ring. Makes 6 servings. |
