SKILLET UPSIDE DOWN CAKE 
2 tbsp. butter
3/4 c. brown sugar
Fruit (pineapple or peaches), drained
3 eggs, separate
1 1/2 c. sugar
1 1/2 c. cake flour
1 tsp. baking powder
1/4 tsp. salt
Whipped cream

1. Melt 2 tablespoons butter in oven proof skillet (cast-iron good) over slow fire.

2. Add 3/4 cup brown sugar by sprinkling evenly over skillet.

3. Add fruit - remove from stove.

4. Beat 3 eggs until light.

5. Add 1/2 cup sugar and beat again.

6. Add 1/2 cup boiling water and beat.

7. Fold in 1 cup sugar sifted with 1 1/2 cups cake flour, 1 teaspoon baking powder and 1/4 teaspoon salt.

8. Pour over fruit in skillet and bake in moderate oven for 45 minutes. Serve with whipped cream after turning skillet upside down on a platter.
