UPSIDE DOWN CAKE | |
1/4 c. butter 1 c. brown sugar Peach halves or pineapple or pear halves 1 egg cake (from mix if desired) Melt butter in heavy frying pan or a cake pan. Add brown sugar. Spread it evenly in the pan. Optional: Sprinkle with pecan nut meats. Put in pan close together peaches, pineapple or pears. Sprinkle with lemon juice. Cover with cake batter. Bake at 400 degrees until top is brown and crusty, about 35 minutes. Turn out on a serving dish, fruit side up. Garnish with whipped cream. Serves 6. |
