UPSIDE DOWN CAKE 
1 1/4 c. sifted flour
1 1/4 tsp. baking powder
4 tbsp. butter
3/4 c. sugar
1 egg
1/2 c. milk
4 tbsp. butter
1/2 c. brown sugar
1 c. crushed pineapple, apricots or peaches

Sift flour once, measure, add baking powder, sift again. Cream butter and sugar until light and fluffy. Add egg then flour and milk alternately. Melt 4 tablespoons butter in iron skillet. Add brown sugar, stir until melted. Add pineapple. Pour batter over mixture and bake in moderate oven 30 minutes.
