TAMPICO SHRIMP | |
1 lb. fresh shrimp, peeled 1 tbsp. vegetable oil 3 1/2 tbsp. butter 6 tbsp. fresh cilantro, minced 6 tbsp. parsley, minced 4 cloves garlic, minced 4 tbsp. scallions, chopped 1 fresh jalapeno pepper, minced 2 tbsp. cumin 4 tbsp. red salsa Melt butter and oil in large skillet. Mix all ingredients and stir-fry on high heat until shrimp turns pink and has curled. Serve with rice and (or) tortillas. |
