CHICKEN FRUIT SALAD 
3 c. cooked chicken, cut in chunky pieces
3/4 c. celery, chopped
3/4 c. red or green seedless grapes, halved
1 (20 oz.) can pineapple chunks in natural juice, drained
1/4 c. walnuts, chopped (optional)
1/4 c. mayonnaise
1/8 tsp. salt
Lettuce leaves
1 (11 oz.) can mandarin oranges, drained

Toss chicken, celery, grapes, pineapple, oranges, and 3 tablespoons walnuts together lightly. Gently mix mayonnaise and salt with chicken mixture. Serve on lettuce leaves. Garnish with remaining walnuts. Serves 6.
