CONFETTI RICE 
2 c. tomato juice
1 c. frozen mixed vegetables, broken apart
1 1/2 c. instant rice
1/8 tsp. pepper

Combine tomato juice and mixed vegetables in medium saucepan; bring to a boil. Stir in rice and pepper. Cover, turn off heat and allow to stand 5 minutes. Fluff with fork. Yield 4 servings.
