TENDER SHORTCAKE | |
2 1/4 c. sifted cake flour 4 tsp. baking powder 2 tbsp. sugar 1/2 tsp. salt 1/3 c. shortening 1 egg, slightly beaten 2/3 c. milk 1. Lightly grease and flour an 8" round layer cake pan. Preheat oven to 425 degrees. 2. In medium bowl, sift flour with baking powder, sugar, and salt. With pastry blender, or 2 knives, cut in shortening until mixture resembles coarse cornmeal. 3. Make well in center. Add egg and milk; stir quickly just until combined. 4. Spread in prepared pan; bake 15 minutes, or until golden. 5. Partially cool, in pan, on wire rack. Serve warm, with any desired fruit filling. |
