NORWEGIAN WHEAT BREAD 
2 1/2 c. milk
1/2 c. butter
2 packs yeast (dry)
7-8 c. flour
1/2 c. sugar
2 tsp. ground cardamom
1/4 tsp. salt

Heat milk and butter together until butter melts. Pour into large bowl and cool to lukewarm. Stir in yeast. Sift 7 cups flour, sugar, cardamom and salt. Add to milk mixture, mixing well. Turn dough onto floured board and knead as much of remaining flour into dough as necessary. Place in buttered bowl. Brush with melted butter, and cover and set in warm place to rise until double in size. Punch down. Let dough rest for 10-15 minutes. Divide in half, knead lightly and shape into loaves. Put in loaf pans. Cover and let rise until double. Bake 60 minutes at 350 degrees. Makes 2 loaves.
