SWEET POTATO PIE 
3 to 4 sweet potatoes, baked
1 (16 oz.) can crushed pineapple in own juice
1/3 c. unsweetened coconut, shredded
1/4 c. chopped nuts (pecans, walnuts, or almonds)
1/3 c. Nutty Rice or Nuggets cereal
1 tsp. pure vanilla extract
1/2 tsp. pumpkin pie spice

Spray a glass pie pan with non-stick spray. Peel sweet potatoes; dice and mash in a large mixing bowl. Add can of pineapple with juice, vanilla extract, and pumpkin pie spice. Beat thoroughly with mixer, whipping until smooth. Pour into the pie pan or any glass baking dish and top with coconut, chopped and Nutty Rice cereal. Bake at 350 degrees for 25 minutes.

A natural delicious dessert with fiber and no sugar. Enjoy.
