GRATED SWEET POTATO PUDDING 
2 c. grated raw sweet potato
1 c. milk
1 c. sugar
2 eggs, slightly beaten
2 tbsp. melted butter
1 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. salt

Grate raw sweet potato into milk to keep them from turning dark. Add other ingredients in order given. Pour into a well-greased 1 1/2-quart casserole dish.

Bake in 350°F oven for 1 hour. Serve warm.
