HAM AND CHICKEN EN COCOTTE 
4 tbsp. oil
1 c. cubed ham (1/4 lb.)
12 sm. white onions, peeled
1/2 lb. mushrooms, halved
3 potatoes, peeled and cubed
3 lb. chicken parts
5 tbsp. flour
1 tsp. salt
1/2 tsp. pepper
2 c. boiling water

In Dutch oven heat 2 tablespoons oil over medium heat; add ham and cook, stirring frequently until crispy. Remove. Add onion, mushrooms and potatoes. Cook until golden brown; stir. Remove.

Add remaining oil and heat. Coat chicken with flour and salt and pepper. Brown in hot oil. When all chicken is brown, put onions and potatoes back in pot. Add water and salt and pepper to taste. Cover and cook at 375 degrees (preheated oven) for 30-40 minutes. Uncover, add ham and mushrooms and bake 15 minutes longer. Serves 4-6.
