LOW CHOLESTEROL PUMPKIN PIE | |
PASTRY FOR 9" ONE-CRUST PIE: 1/2 c. Egg Beaters 3/4 c. sugar 1/2 tsp. salt 1 tsp. cinnamon 1/2 tsp. ginger 1/4 tsp. nutmeg 1/4 tsp. cloves 16 oz. pumpkin 1 tsp. vanilla 1 1/2 c. evaporated skim milk 1. Prepare pastry. Heat oven to 425 degrees. 2. Beat Egg Beaters slightly in large mixer bowl. Add remaining ingredients and beat until smooth. Pour into pastry-lined pie pan. 3. Bake at 425 degrees for 15 minutes. Then at 350 degrees for 45 minutes until knife inserted near the center of the pie comes out clean. 1 serving = 219 calories, 1 mg. cholesterol. |
