LOW FAT LEMON CHESS PIE 
1 1/2 c. sugar
2 eggs
2 level tbsp. flour, blended with sugar
1/4 c. milk
3 tbsp. diet melted butter (may add 1 tbsp. oil)
1/4 tsp. salt
1/2 tsp. butter extract
1 tsp. lemon extract or 1 grated lemon rind
3 tbsp. lemon juice

Mix dry ingredients together, then add wet ingredients. Do not let lemon juice and milk sit together. Pour quickly into 9" pie crust. Bake at 325 degrees after starting on 350 degrees for 30 minutes or until set.
