EASY ITALIAN BAKE 
1 medium package egg noodles
2 large white onions
1/2 jar Marinara sauce with basil
1 package spicy or regular sausage (or use 1/2 ground beef and 1/2 sausage)
1 package enchilada seasoning
2 cans small chopped olives
Low fat or regular sour cream or avocado
A dash of red or white wine

You will also need about 2.5 cups cheese of choice I live a mix of Pepper Jack and cheddar fresh grated.

Chop onions and sauté in 4 tablespoons of butter; cook for about 20 minutes until onions are almost clear.

In a skillet brown the sausage. When no pink remains, add enchilada seasoning and the dash of wine. Reduce heat and add sauce.

In a large pot, combine onions, beef and sauce mixture. Simmer on low to medium heat. Cook egg noodles just until al denté. Mix the noodles with the meat and sauce and put into two small (sprayed) Pyrex dishes or one large one. Sprinkle cheese to top and bake at 300°F for 15 minutes covered in foil and 10 without or till cheese is melted and golden.

Serve family style with wine, fresh bread or salad and enjoy with friends.

For a different taste, use taco seasoning in place of the enchilada seasoning and top with corn chips.
