COLONEL S.'S CHICKEN | |
2 c. unseasoned bread crumbs 2 tsp. instant chicken broth 2 tsp. paprika 1 tsp. poultry seasoning 1 tsp. onion powder 1 tsp. oregano 1 tsp. rosemary 1 tsp. celery salt 1/4 tsp. pepper 1/4 tsp. garlic powder Combine bread crumbs, chicken broth and rest of spices. Place in tightly covered moisture proof container. Stir until well mixed. Use 1 tablespoon of mixture per serving of chicken. Moisten chicken in some tomato juice before shaking with crumb mixture or chicken may be moistened with milk or lemon juice. Shake chicken in container. Allow to dry 15 to 20 minutes. Spray shallow pan with nonstick cooking spray or wipe lightly with oil. Arrange pieces with skin side down, not touching each other. Place in 450 degree oven for 15 minutes. Turn chicken over and bake 20 minutes more. During first baking period place on the lower rack in oven, place pan on middle rack for last period of baking time. |
