HONEY CAKE 
1 c. brown sugar
1 c. honey
1/2 c. vegetable oil
4 eggs, beaten
3 1/4 c. flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. allspice
1/4 tsp. ground cloves
1 c. black coffee
1/3 c. plus 1/4 c. raisins

Preheat oven to 350 degrees. Mix together well the brown sugar, honey, vegetable oil and eggs in a large bowl. Add flour, baking powder, baking soda, cinnamon, allspice and ground cloves. Mix well. Stir in coffee and 1/3 cup raisins. Pour batter into a 2 quart bundt or angel food cake pan. Sprinkle remaining raisins on top of batter and gently swirl into batter. (If all the raisins are mixed into the batter at one time they tend to sink to the bottom of the cake.) Bake for 30 to 40 minutes, do not overbake.
