2 med. onions 2 lg. cloves garlic 1 med. eggplant, in cubes 6 med. zucchinies, sliced thick 2 red or green bell peppers, in chunks 4 lg. tomatoes, in lg. chunks 1 jar marinated artichoke hearts 1/2 - 1 can olives 1 tsp. salt and pepper 1/2 c. parsley Layer ingredients in order given in large casserole. Sprinkle seasoning between each layer. Press down hard. Drizzle the artichokes over tops, plus 1 or 2 tablespoons olive oil. Cover and bake in 350 degree oven for 3 hours, occasionally lift lid and spoon or squirt juice from bottom to top. If it appears too juicy, leave lid off for last half hour or so to dry it out. When 3 hours are up remove from oven and stir gently to mix all layers. Serve hot or cold. Good with French bread. |
