FRITTATA 
4 sm. zucchini
3 tomatoes
3 garlic cloves
1/2 onion
1 c. grated cheese (Parmesan)
3 eggs

Coat frying pan with (1/8 inch) olive oil. Mince garlic, onion, zucchini very fine. Brown oil garlic and onion together. Add zucchini.

Cook ingredients down to a pasty form. Add finely chopped tomatoes - cook to a paste. Salt and pepper. In a separate bowl, beat eggs slightly, add grated cheese.

Add egg mixture to zucchini mixture, blend ingredients with a fork. Lower flame, cover, cook until harden. Brown then turn over with a dish on top of skillet. Cook until well browned. Cool in the refrigerator.
