TOAD IN THE HOLE 
2 slices bacon
1/2 lb. pork sausage links, cut into 1/2-inch pieces
1 c. all-purpose flour
1 tsp. baking powder
1 tsp. salt
3 eggs, beaten
1 1/2 c. milk

Cook bacon until crisp. Drain, reserving 2 tablespoons bacon drippings. Crumble bacon; set aside. In same skillet, brown sausage; drain fat. Stir together flour, baking powder and salt. Add eggs and milk; beat until smooth. Spread reserved bacon drippings in an ovenproof dish. Place sausage pieces in dish; sprinkle with crumbled bacon. Pour batter over all.

Bake, uncovered, at 400°F until set, 30 to 35 minutes.

Serves 4.
